Salted Caramel Chocolate Chip Blondies

Hello, loves! Happy Monday! For me it's been an active morning and a lazy afternoon, but it's giving me the chance to continue updating the blog with past recipes.
Here is one of my FAVOURITES! It's what happens when chocolate chip cookie bars meet ooey gooey caramel. And would you believe me if I told you they were gluten free, vegan, fair trade, had no refined sugar, and packed a punch of all natural plant protein? Recipe is below!

Ingredients 1 can chickpeas (drained and rinsed) 1/3 cup coconut sugar 1 1/2 tbsp powdered peanut butter or 2 tbsp regular peanut butter 1 tsp baking soda 2 tsp vanilla Dash salt 1/4 cup water 1/2 cup oat flour 1/4 cup coconut flour Chocolate chips
Caramel: 1/2 cup softened dates (soak in warm water for 30mins to an hour beforehand) Dash salt
Method Blend the chickpeas, sugar, peanut butter, baking soda, vanilla, salt, and water until smooth. Add flours and blend again until a dough forms. Stir in the chocolate chips. Place the dates, salt, and 1/4 cup of the soaking water into a blender and blend until smooth. Spread the dough into a lined pan and swirl the caramel on the top, then bake at 375 for 25-30 minutes.
