Cookie Dough Brownie Bars

Packing a punch and switching up the usual weekly routine with a new snack to fuel that daily grind! These homemade energy bars have all the deliciousness of chocolate chip cookies marbled with fudgey brownies, and are topped with a peanut buttery drizzle. Who could ask for anything more? AND these decadent lil pals also happen to be gluten free, refined sugar free, oil free, and full of amazing plant foods. We’re talking plenty of protein, fibre, and antioxidants (among others!) A perfect companion to treat yourself (mind and body) on those long, busy days.


Ingredients

Cookie Dough: 1 can chickpeas (shelled) 1/4 cup coconut sugar 1/8 cup cane sugar or stevia 1 1/2 tbsp powdered peanut butter or 1 scoop vanilla protein powder 1 tsp baking soda 2-3 tsp vanilla Dash salt 1/4 cup water 1/2 cup flour of choice (I normally use oat!) Chocolate chips

Brownies: 2 cups sweet potato purée (chopped, boiled, and blended 2-3 medium sweet potatoes) 1/4 cup cocoa or cacao powder 1/4 cup coconut sugar 1-2 tsp vanilla Dash salt 1 tsp baking soda 1/4 cup oat flour 1 tbsp coconut flour

Method

Combine each respective recipe’s ingredients in a high speed blender or food processor (except the chocolate chips in the cookie dough, mix those in after a dough has formed!) until smooth. In a lined or greased pan, place both the brownie batter and the cookie dough by spoonful. Swirl the two together to create a marbled effect and to distribute evenly. Bake this at 375 for 25-30 minutes until set and allow to cool completely before cutting. Once cool, cut into bars and top as you please (I drizzled mine with some powdered pb mixed with coconut oil!), and enjoy!
