Chocolate Banana Bread

I had a moment yesterday where I couldn't decide if I wanted to make brownies or banana bread. With the gloomy weather outside, I just knew I wanted to bake something warm and comforting.

And, being the indecisive person I am, I ultimately decided to combine the two!

The result? A moist, fluffy banana bread with all the fudginess of brownies. And being gluten free, refined sugar free, and oil free, who could ask for anything more?

Ingredients

2 bananas 1 1/2 tbsp flax 1 tsp vanilla

2 tbsp coconut yogurt Dash salt

1 cup oat flour 2/3 cup brown rice flour

1 tbsp baking powder

1/4 tsp baking soda 2 tbsp potato starch 1/4 cup cocoa

Opt. 1/3 cup coconut sugar (for a sweeter taste)

Opt. Chocolate chips

Method

Start by blending or mashing the bananas until smooth. Stir in the flax, vanilla, yogurt, and salt. In a separate bowl, combine the flours, baking powder and soda, starch, cocoa, and coconut sugar (if using) until evenly distributed. Pour the wet mixture into the dry and stir until combined. Pour into a greased or lined loaf pan and sprinkle with chocolate chips (if desired). Bake this at 350 for 30-40 mins until a toothpick comes out clean.


And there you have it! A wonderful, warm, chocolatey rainy day treat that'll nourish your body and your tastebuds.
