Raw Vegan Berry Ice Cream Sandwiches

Happy (almost) August, lovelies!
Summer is in full swing and that means it is HOT outside. Like really hot. And if you're like me and don't have air conditioning, you're probably really feeling it right now.
You might also, like me, be in search of an easy-to-make, healthy frozen treat.
Well, look no further!
I asked on Instagram if people would rather I make ice cream sandwiches or some kind of raw vegan dessert, but a few hours later I realized: why not both?
And this brain child was born.
Honestly, I was a little worried it wouldn't work (being that I am super new to raw vegan dessert-making), but I am SO happy with how they turned out.
Gluten free, sugar free, raw vegan (of course), and super easy to make, if you want these for yourself, the recipe is below.

Ingredients
1/2 cup cashews
1/4 cup walnuts
1/3 cup softened dates (if not soft, soak in warm water for 15-30 mins beforehand and drain before using)
1 tsp vanilla
3 tbsp raw cacao powder
1 banana (chopped and frozen)
1/2 cup frozen berries
1 tsp vanilla
Plant milk of choice
Start by adding the cashews, walnuts, dates, vanilla, and cacao to a blender or food processor and blend until a crumbly, doughy mixture forms (it doesn't need to be completely smooth, but should have all the ingredients evenly distributed). Line a pan with parchment paper and press the mixture into a layer around 1/4 inch thick. Place in the freezer for 20-30 minutes. After this time, remove from the freezer and cut to form 6-8 rectangle "cookies". Return to the freezer. In the meantime, place the banana, berries, and vanilla into a blender or food processor and blend, adding plant milk little by little if necessary, until a thick, soft serve consistency is reached. Remove your cookies from the freezer and spoon nice cream onto half of them. Gently press each of the remaining four cookies onto the four topped with nice cream to form the sandwiches, evening out the nice cream if necessary. Return to the freezer and allow to set for an additional 20 or so minutes before serving.
